YIELD: 8 EGG CROQUETTES
COOKING TEMP: 350F PORTION: 1
COOKING TIME: 12-15 min. COOKING PAN: Fryer
INGREDIENTS AMOUNTS PROCEDURES
| Eggs hard cooked : 6 ea 1. Peel and dice boiled eggs into 1/4"
| Margarine : 3 Tb pieces.
| Flour : 5 Tb 2. Melt margarine. Stir in flour to
| Milk lo fat : 1 cp make a roux. Heat milk and add with
| Salt : 1 ts salt and pepper to roux. Cook and
| Pepper white : 1/4 ts stir until very thick.
| Cracker crumbs : 1/2 cp 3. Stir in chopped eggs. Place in pan.
| Eggs : 1 ea Pat flat. Chill overnight.
|. 4. Cut into triangles.
5. Beat 2nd eggs. Dip triangle into
beaten eggs and then in crumbs.
Brown in deep fat fryer until
golden brown. Serve hot.
